Bay Leaves, Indian (Tej Patta) – Hailing from the southern slopes of the Himalayas, Tej Patta isn’t actually a true laurel leaf, but it is the leaf of the cassia tree.  A staple in Indian/Himalayan cooking, Tej Patta has notes of cinnamon, nutmeg, and black pepper and are commonly found ground up in spice blends like Garam Masala.  Be careful not to substitute these leaves when a Turkish bay (or laurel) leaf is called for!
